My hubby raved about this, thought I'd share - when I get the hang of my camera I'll start posting pictures.
Kale Apple Salad
4-5 Stalks of kale, ribs removed
1-2 lemons, juiced
Kosher or coarse sea salt
1 large Gala Apple
Place kale in a large bowl with the lemon juice and massage the juice into the leaves. Chop the kale finely using a knife, salad scissors or pulse in a food processor. Return to bowl and sprinkle with the salt to taste.
Core and slice apple. I used a 10 sectioned apple wedger, and then sliced each wedge thinly. Add to the kale and toss gently. The lemon juice will preserve the color of the apples.
Let marinate up to an hour and serve chilled.
