Potato Salad

Potato Salad

5 lbs potatoes, peeled and cubed.
1 bunch green onions, sliced (or ΒΌ medium yellow onion)
1 stalk celery, diced
1 carrot, grated
1 cup NaSoya Fat Free Nayonaise
2 Tablespoons Dijon mustard (or to taste)
4 Tablespoons sweet pickle relish
1/2 teaspoon salt

Boil potatoes in water until tender (about 20 minutes). Drain and cool. Mix other ingredients together. Add potatoes. Chill thoroughly before serving.

The grated carrot adds a nice touch of color to the salad.  I've never put carrots into potato salad before, I might give that a try.
