Barbecue Bean Sloppy Joe Mix on Baked Potato


Baked Potato, Hominy, Salad


Barbecue Bean Sloppy Joe Mix in Skillet

Barbecue Bean Sloppy Joes on Baked Potatoes

1 onion, chopped
1 bell pepper, chopped
¼ cup vegetable broth
3 cups cooked brown rice
2  15 ounce cans pinto beans, undrained
¾ cup fat-free barbecue sauce
1 ½ tablespoons chili powder

Place the onion and bell pepper in a non-stick pan with the vegetable broth.  Cook, stirring occasionally until vegetables soften slightly, about 3 minutes.  Add remaining ingredients and cook for about 12 minutes, until well heated.  Serve over baked potato. 

Notes: This is a Mary McDougall recipe.   The original recipe calls for this to be served on buns which are not recommended on the McDougall maximum weight loss program.  So I served it on baked potatoes and found it tasty and very filling.  It also makes a lot.  I would definitely make this again.

The hominy is just a can of yellow hominy heated on the stove.  The salad is just lettuce, cucumber & tomato topped with a little 321 dressing.   :)
