This is inspired by a recipe in Vegan with a Vengeance by Isa Chandra Moskowitz.

Kugel is the yiddish word for pudding but really has come to mean casserole with potatoes in my experience.
Most people think of potato kugel and also a sweet dish called lokshan (noodle) kugel. Yum Yum but I haven't figured out how to mcdougalize lokshan kugel. Another day. I hope you enjoy this dish. It is a bit of a patchke (lots of steps) but worth it.

1 cauliflower
4 med yukon gold potatoes
1 sweet potato or yam
1 tub of silken or soft tofu
1 cup of whole wheat bread crumbs
2 leeks
1 onion
1/2 cup fresh parsley
1/2 cup fresh dill
1 cup slivered almonds (optional..i put it on for company and pick them off for myself)
Salt and Pepper

boil the cauliflower cut up in chunks until soft
boil the potatoes and sweet potatoe peeled or not, cut up in chunks...until soft
Mash up the cauliflower and the potatoes in a BIG bowl
Crumble the tofu into a food processor and whirrrrrrr until creamy...add to the potatoes

Meanwhile (or before) cut up the onion and the leeks pretty small and sautee in water until very soft..add to potato mixture.

Roast or toast the slivered almonds lightly if you choose. (I do!)

add to potato mixture:
bread crumbs
1 tablespoon parsley and 1 tablespoon dill
salt and pepper to taste
Mix everything well and spoon into a large casserole. You wouldn't want the height of the mixture to be more than 3 inches or so.

topping:
mix remaining herbs together with the almonds and spread evenly over the top of the kugel

Bake at 350 for 1/2 - 1 hour depending on how thick your kugel is and how you like it. As you can see everything is cooked already so you could even eat it without the final oven...but that would be weird! Ooooh, I just tried it before it went in the oven and it tasted really good..kind of like an unusual mashed up potato salad.

P.S. If you cook this and put it in the fridge overnight you can cut it up the next day and microwave it. Refridgeration firms it up. I do this for potlucks where I want to arrange the cut up sections pretty on a platter.

This looks wonderful!  I have a potluck luncheon coming up next week and think I will try this out to consider taking.  It looks yummy....

Nice idea. It was a big hit tonight. And you can't mess it up. I've tried! you can put in cooked carrots or more potatoes....the original recipe was ALL cauliflower....Let me know when you try it.

IF you want this kugel to be a little firmer try 3 cups of bread crumbs instead of 1 and also be sure to refridgerate it and then the next day it will be firmer.
