Cranberry Chutney

Cranberry Chutney

1 16-oz. package cranberries
2 cups sugar
1 cup water
Juice from two medium oranges (about ½ cup)
1 cup raisins
1 celery stalk, diced
2 shallots, peeled and minced
1 medium apple, diced
2 Tbsp. grated orange peel
1/4 cup candied ginger, finely diced

In a 3-quart saucepan, over medium heat, heat cranberries, sugar, and 1
cup water to boiling, stirring frequently. Reduce heat to low. Simmer 15 minutes. Remove from heat.

Stir in remaining ingredients. Cover and refrigerate. Makes three pints or 48 – 2 tablespoon servings . Calories per serving = 55. Fat= 0 grams.

Notes:  This is very good on baked yams and cooked carrots.

I LOVE chutney!  What kind of texture does this have when it is ready to serve?  Is it thick? runny?  just curious.....
